anyone had experience with eating fresh coconut chunks as snacks? I read a lot about using coconut oil in cooking so thinking that using coconut chunks must be good on LCHF diet as snack in afternoon?

It seems to me like a good choice, it’s 3.7g carbohydrate per 100g.

The carb count I’ve quoted is for fresh coconut. Be careful that packets of coconut may have added sugar or be dried so the carb count per 100g will be higher.

The most challenging thing about eating fresh coconut is how long you need to chew it - definitely can slow down food intake too!
