First of all Hello to everyone. I'm new here so still trying to figure things out. I'm from Canada but yours was the first on a long list created by a query I made as to glucose levels. Firstly I've adopted a vegetarian (more or less) way of eating. A little more stringent than a Vegan you might say. I use no oil as well as all the other Vegan restrictions. So the question I had was _Why after 2 hours had my blood glucose levels risen to 9.3 when my meal at supper consisted of brown rice onion garlic peppers and whole grain buns. Its very strange. All I can come up with is the rice. My normal fasting glucose is 4.6 - 5.3 I'm controlling with this diet since being diagnosed. My diet before being diagnosed was the reason for diabetes.
