Glucose too high

hi thank you for taking time to reply,
Yes being vegetarian for 32 years I am use to all my meals revolving around carbs, curry n rice, chilly n rice, lasagne, bread, baked potato, I do have salad and cauliflower with cheese sauce lots of diff cheese for snacking on Things are made worse with my disability I am unable to use a hob or oven as it is dangerous If only social services could provide me with a chef twice a day, then I wouldn’t have to rely on ready made meals

I don’t eat meat either, which does mean you end up eating all the carbs! I went low carb a couple of months ago, and I’m eating lots of food that doesn’t require any preparation - avocado with a dollop each of mayonnaise and peanut butter makes a great breakfast. If you don’t feel comfortable using a knife, Iceland sell them ready prepared and frozen.

I love curries and chillies - I just stuff the sauce with more non carby veg and don’t bother with the rice. Assuming you’re using a microwave if you don’t use a hob or oven? Perhaps you could chuck a selection of frozen pre-prepared veg into your curry/chilli and microwave it all together, I’d chuck a tablespoon of butter or coconut oil in with it too, to help you feel satisfied.

Cheese is a good snack, as are olives and nuts.
