Hi Defren
well done on the great changes in your diet, even though the expense is greater. Of course GM and other food nasties have everything to do with the Diabetes and Obesity epidemic, just look on youtube, I realised this about a year ago, so stopped all processed foods and cut meat intake right out unless it was Organic and then it was only about once a week, my main diet was fresh vegetables, all fast fried in the wok with herbs and spices, all herbs and spices are good for us in one way or another, potato's and corn on the cob were boiled in usual way, no foods from tins at all and I was eating rice twice a day, also plenty of fruit.
I will say that the most important part of these changes was using Coconut oil only, this has so many health benefits, it does not cause cholestorol or heart disease and just as importantly does not promote weight gain, I am so surprised that the Diabetes folk never refer to the bonuses of Coconut oil. Coconut oil is said to be the healthiest oil on the planet as the molecules are medium chain fatty acids that the body can utilise immediately and not store as fat, where as the molecules in all other oils including Olive oil are long chain fatty acids that the body cannot utilise and so stores as fat, not to mention the toxic by product created when these long chain fatty acids reach cooking temperatures, these are not produced with Coconut oil and just by using Coconut oil will help weight loss straight away or at least reduce the possibilities of weight gain, just by my change of diet I lost 3 and a half stone in 6 months and done absolutely no exercise whatsoever.
I believe the changes I made had a great affect on my Diabetes as I don't even take medication any more and my HBA1C last month was 41 which I believe is about 5.6, absolutely normal and that is after taking no Insulin since end of July 2011, having said that I still keep eating healthily and need to test HBA1C again in December. At age 50 I was diagnosed Type 2 in May 2010, then Type 1 in June 2010 after being admitted to hospital with Ketoacidosis, with this marvellous result of my so called Diabetes I now believe that late onset Diabetes is not necessarily a condition we have to live with for the rest of our lives, of course many would suggest my diagnosis was questionable, I am no doctor, but like the rest of us, I believed what my GP told me and then injected for a year, all I know is that if I had not made these big changes in my diet I would probably still be injecting now, I am so so glad I do not have to now.
I always read the labels of ingredients, especially as sugars have so many different labels that THEY do not explain to us, we just do not realise the damage a lot of ingredients in our processed, manufactured foods can do to us, well worth doing our homework for the good of our long term health.
