Just made the light & fluffy coconut flour pancakes - very nice and work out at 90cals & 2.9g carbs apiece.i used 50g coconut flour & 35g butter instead of the cup measures and for sweetener used 1 sachet stevia with 2 tsp Splenda as i didnt have the suggested sweetener
I added some flaked toasted almonds and cacao nibs to the remaining mix with a little more unsweetened almond milk and that mix is baking in the oven in silicone muffin moulds as i type - that's 11's sorted out!
