GRACEK'S WINTER FISHY CHEESY BROTH

It's Autumn and I'm in the mood for quick but substantial broths that I can get down my neck in no no time! Don't know about you but as the weather gets colder I want my food NOW and I want it to be GOOD.

Just made this quickie in the microwave while I was hanging out the washing and it's nice and thick and a good one for taking to work for lunch :)

Preparation - 5 mins
Servings - 4
Cooking time in micro - 8-10 mins
As this is microwaved don't use lots of water, but if conventional cooking use more

INGREDIENTS
quarter cube fish stock
4 oz boiled water to your own measuring
half tin chopped tomatoes
dried herbs - pepper, dill, turmeric, chives, onion salt if needed
chia seeds
fresh salmon steak
1 courgette
1 tin of black eye beans - 175g drained = 18.1g carbs per 100g
handful of grated mature cheddar cheese
optional low carb crackers or breadsticks
single or double cream or soured cream

Dissolve the stock cube in very hot water
Add the half tin of tomatoes and the herbs
Cut the salmon up into small chunks and remove any bones
Chop the courgette into small chunks
Drain beans
Add all the ingredients except cheese to the stock
Microwave for 5 minutes and stir
Add the handful of cheese and microwave for a further 4 mins
Check if courgette is cooked
Leave to cool and then plonk it in the blender until smooth

Serve with a dollop of cream or soured cream and low carb crackers 3.5g each

Looks good Grace, I would omit the beans and the crackers, add some chia for thickness, pour in a mug, sit down, feet up on the couch, peace and quite and enjoy!

I had mine with soured cream - 'twas lovely. Thanks for reminding me about the Vodka. I'm off to the shops later.

Misread this as GraceK's winter fishy cheesy breath :lol: But on re-reading it, YUM! but using home made fish stock. Just finished my tomato, pepper & veg soup(chicken stock) and you have made me hungry again!! :evil: :evil:

Well it was quite filling, I've been to the Jobcentre and to the shops and back, 'cooked' a dinner for the birds cos they've been hinting it's time I started feeding them again as it's getting chilly. I've had my first two 'regulars' down in the garden giving me the thumbs down so I had to get a move on or I'll lose my 5 Star Birdie Food Garden rating and I can't be having that. :lol:

Today they've got Dark Ryvita soaked in warm water with Hemp seeds and a pot of soya yoghurt mixed in. I bought all those ingredients for myself a couple of weeks ago, the Ryvita made my BS shoot up, I didn't like the taste of the hemp seeds or the soya yoghurt - so at least the birdies are doing well out of it. They've got fatballs out there too, so I expect the buggas will wake me up early tomorrow with their song of gratitude. :D :lol:
