Do green bananas have same carbs as ripe? And does cooking change carb content of food?

it does say that there is a clear difference between unripe green and ripe bananas and explains why.

But so much depends on the size of the banana or the portion size, that it must be really hard to make an accurate guess, especially if deciding an insulin dose!
