Had some carbs - bg spiked high

So I've been on a keto diet for the past month or so. Unfortunately I slipped up today and had a sandwich + 2 x crisps... checked my BG 2 hrs later and it was at 8.6, checked again to be sure and it was 8.1.

Surely this is extremely high for someone with prediabetes?

Not extremely high for someone with prediabetes at all.

The hba1c for someone with prediabetes is between 42 and 48, which means an average blood glucose of somewhere between 7.0 and 7.8, very close to your peak of less than 9.

My prediabetes hba1c is 42

Also I was on a keto diet, very low carbs for the 3-4 weeks so the highest figure I had was about 5.2mmol

Which seems to show the keto diet works.
If the highest you were was 5.2, or even if that is your average and you keep it up, your hba1c should be well below 42.

What kind of numbers did you see on your meter before you changed your diet? It's likely to have averaged around 7.

Yeah it did work but I had a moment today.

Unfortunately I didn't test it before my hba1c test early this month so I have no idea what kind of numbers I got.

Not sure if maybe the sudden hit and increase in carbs today is what also lead to a big spike

You ate about 50gs of carbs in one go after coming off a Keto diet.
You need to carb up for at least 3 days of 150g of carbs before even attempting a 75g OGTT.
You've just turned off the pump, your beta cells need to be challenged again for a few days before normal insulin secretion rates return.

I know it was silly of me, as I had a weak moment. How do you suggest I move forward as I do want to incorporate a little more carbs?

No apologies needed, how do you know if you're progressing unless you self test.
As you're only pre-diabetic you haven't over taxed your beta cells to the point of a diagnosed T2 but they are already displaying dysfunction.
If would continue to eat low carb which is low insulin diet & try to lose more weight if possible.
After 6 months I would look at reintroducing moderate carbs slowly & use your meter to guide you.

Some who is not diabetic can have spikes like that. I wouldn't worry too much, it won't make a difference. Your bm been around 5.2 or lower, I am sure it will be well below 40.
Four yrs ago my Hba1c was 36. My recent test is 44. Which surprised me. Don't read too much into it and carry on as your doing, now you know you cannot eat a sandwich and 2 x packs of crisp. A brisk walk up a hill would bring it down.
Well done you,

It was one meal, one rise slightly higher than you e got used to (and really not awful). If the rest of the time you‘re sticking with low carb this won’t affect your hba1c or cause harm. The only consideration is to not let it become a slippery slope where it happens more and more often. You’ve learned what this does to you now too. some people challenge themselves every now and again (months apart not days) to see how they are getting on.

Otherwise forget it. Stressing over such a small one off event will likely cause more glucose issues than the sandwich did.

Reading your previous thread, it is understandable that you are anxious, because all this is very new to you. You are doing great. You had a little blip, it is fine, its ok.
It is a learning curve for all of us at first. You have learnt that, Keto works very well for you and doing great. Now you know that bread is not suitable and cannot tolerate it. Too many carbs plus the crisp. I am sure you are back on keto now.
I am 10 years in now, my HbA1c is 44, still diet controlled. It can be done.
Medication i am on, is for High blood pressure and nothing to do with diabetes, in my case. unfortunately it is genetic and would not be able to bring it down naturally.
