I can so sympathise! Gained 10 kg since Type 1 diagnosis 6 mths ago and it feels like 1 kg of muscle and the rest in padding!
My BMI is still only around 21, but body fat % is now almost 32% - the borderline for obesity(!) according to some indices... I too started semi-low carb (50 -80g), - sadly with some serious carb lapses - to see if this can rid me of the excess 5 kg which is definitely driving me around the bend - also cannot afford/will not buy bigger clothes.
A major theory behind low carb weight loss is that the relatively higher fat intake leads to quicker satiety & over time consistently less calorie intake...not sure this is foolproof especially if diet includes the appetite stimulating effects of alcohol (ask me how I know LOL).
Do you track calories as well as carbs? What's your fat intake like? Can be easy to overdo 'healthy' nuts, oily fish, etc...8 lbs in 2 weeks suggest at least some 'fullness' may be water retention, could you be taking in more salt?
Just had a long discussion with my endo about my weight loss strategy - even though I regularly exercise (hiking, horse riding, Pilates) we concluded I need to up this much more. My Bg control isn't yet ideal, so he doesn't want me reducing insulin any further. But even with erratic low carb, my triglycerides & cholesterol levels have really improved. Will report in a few weeks whether this approach worked for the all essential weight loss!
