So, since starting a fairly robust diet I have noticed that I have not needed to use any insulin for almost a week. Is this safe to do and am I setting myself up for a fall?

Your profile says T2, but from your earlier posts I take it you were diagnosed with T1 a couple years back, is that correct?

What is your blood glucose like during the day, both fasting and after meals?

Yes T1 for about4/5 years, my blood sugar is at around 4-6 during the day, goes up to maybe 9 after a meal but quickly comes back down again

Very interesting!
So you haven't used your long acting insulin either?

I'd contact your diabetes team on this new phenomenon. I've heard of long honeymoon periods, but going back to not using insulin after 4-5 years is a new one to me.
