Dairy and fats won't affect blood sugar levels. They will increase calorie, which will help stop the weight loss. What diabetes meds is your husband on?

I was sent to a dietician who had a little booklet of things to eat. She then went through that booklet and crossed out all the things that I shouldn't eat because I am a diabetic.

Can't remember everything left on the list, but some of the one I do remember were :

Add double-cream to coffee and soup
Diary, (e.g. cheese and eggs)
Add Vegetable fat to whole milk
Fatty meat

Obviously eggs, cheese and cream might have an effect on cholesterol, so it is always best to seek personal advice from a professional who is aware of your husband's particular case.

You can get "Dried Skimmed Milk with Vegetable Fat". Normally the instructions would be to add water to it, but in this case I was told to add it to whole milk.
Yuk... not a very good idea at all.. I'd avoid "vegetable fat" at all costs and just stick with double cream
