@LittleGreyCat thank you. I did think about just leaving out all the starchy veg, but then wondered if it would spoil the dish, so it seemed best to ask on here for tried and tested ideas. I hope to discover several ideas and to write them down in preparation for Autumn. I'm a little nervous about using the slow cooker butb also looking forward to coming home to tasty meals all ready to eatAnything that you would cook in a casserole you can also cook in a slow cooker.
Simple beef stew would be one easy choice.
There is nothing special or complex about a slow cooker.
Generally it uses less electricity (or the equivalent in gas) than using a main oven.

If you leave out the (Optional) items it is pretty low carb.
For even lower carb leave out the carrots!
I've just purchased a tiny slow cooker for my meals when Autumn/Winter arrive as I'll only be cooking for myself ... daughter off to Uni. Has anyone here any recipes that I can try please as I've not used one before and can only seem to find recipes containing potato and other starchy veg?
You sound an excellent candidate for a pressure cooker. Pressure cooking is essentially fast slow cooking.….my favorite is just doing meat in it.
Salt and pepper a roast of beef. In the slow cooker on low for 4 or 5 hours I like to keep a joint in the fridge to take a slice from when I’m peckish.
It’s also the best way I’ve found to do short ribs.
ALSO the easiest way to make bone broth which can be the basis of any soup.

It's a really tiny slow cooker to make a meal for just myself so it wouldn't fit large joints of meat x….my favorite is just doing meat in it.

Thank you but unfortunately I haven't the money for a pressure cooker now that I've purchased the slow cooker as I'm a single parent putting my daughter through four years at Uni which is 300 miles away from home xxYou sound an excellent candidate for a pressure cooker.
