I've just purchased a tiny slow cooker for my meals when Autumn/Winter arrive as I'll only be cooking for myself ... daughter off to Uni. Has anyone here any recipes that I can try please as I've not used one before and can only seem to find recipes containing potato and other starchy veg?

Diet drinks - the artificial sweeteners taste vile.
Having to forswear foods I have loved all my life.
Trying to find low carb meals when eating out.
Anything that you would cook in a casserole you can also cook in a slow cooker.
Simple beef stew would be one easy choice.
There is nothing special or complex about a slow cooker.
Generally it uses less electricity (or the equivalent in gas) than using a main oven.

Edit:
first hit for beef stew was
Slow cooker beef stew
If you leave out the (Optional) items it is pretty low carb.
For even lower carb leave out the carrots!

Any kind of casserole or stew type dish. Even plain meats. Good for cheaper cuts.
I also do cabbage with bacon or sausages, tastes really nice when done slowly.

If you google low carb slow cooker meals you’ll get hundreds of recipes, I do this for any recipe I fancy so if I wanted a pulled pork recipe I would google low carb slow cooker pulled pork recipe

@LittleGreyCat thank you. I did think about just leaving out all the starchy veg, but then wondered if it would spoil the dish, so it seemed best to ask on here for tried and tested ideas. I hope to discover several ideas and to write them down in preparation for Autumn. I'm a little nervous about using the slow cooker butb also looking forward to coming home to tasty meals all ready to eat :)

….my favorite is just doing meat in it.

Salt and pepper a roast of beef. In the slow cooker on low for 4 or 5 hours I like to keep a joint in the fridge to take a slice from when I’m peckish.

It’s also the best way I’ve found to do short ribs.

ALSO the easiest way to make bone broth which can be the basis of any soup.

I used to bag up things each month to cook in the slow cooker. This was pre diabetes though and haven't made some of these for ages!
I'd buy a big joint of meat add stock/sauce and veg then freeze the bags. When I wanted to cook one you just bung the whole bag in the slow cooker in the morning. They are now called 'dump bags' I was obviously just ahead of the curve!

Beef in beer
Pulled pork
Lamb/beef casserole
Bolgnaise

Basically, anything can be made in the slow cooker just add less sauce or reduce the sauce in a pan later if roo thin.

You sound an excellent candidate for a pressure cooker. Pressure cooking is essentially fast slow cooking. :). And electric pressure cookers have all manner of built in safety mechanisms.

I’m also a candidate for a larger kitchen with room for more gadgets:)

It's a really tiny slow cooker to make a meal for just myself so it wouldn't fit large joints of meat x

Thank you but unfortunately I haven't the money for a pressure cooker now that I've purchased the slow cooker as I'm a single parent putting my daughter through four years at Uni which is 300 miles away from home xx

Hi again.

I’ve been tempted to buy a smaller one. They are often in the charity shops. However I would use it to heat the food I’d made in the larger cooker so no good for you sorry

If you have space and you like that idea it’s well worth checking the charity shops as I often see all sizes for very little money £3-£5 - ( I paid £5 )
