Hello - need some advice

Good morning.

Following a very debilitating long covid episode in 2022/2021, I discovered I was pre-diabetic and put on metformin (1000-2000mg)
After a long, bad year I got progressively worse and was hospitalised with hypercholesterolaemia and hyperglycaemia in December 2021. Insane levels for HbAIC. these are coming down though are very high still
I am now on toujeo and three novorapid injections a day with food.
I also am taking rosuvastatin, ezetimbe, bezalip, metformin and forxiga. My blood fasting sugar levels are in the teens usually and I am trying to target 5-12 glucose levels.
The thing I wanted to share is the trouble with my new diet - diabetic nurses and dieticians maintain I must have carb in my diet.
Pre-covit, I used to follow a low carb regime - and go to work away from the house, drink 3-4 litres of water a day and have food packs if I was dieting ... I now appear not to be able to do this and am struggling to try and get weight down. I always used to avoid carb as much a possible and felt good on a low carb regime
Can someone please help me understand what options I have in this new world - I never injected before Dec 2021 and find eating 3 meals a day weird and difficult.
Low carb dieters on insulin - can you advise?
 
I wonder why you need to eat 3 meals a day if you are on Tuejo and NovoRapid.
The purpose of the fast acting insulin, NovoRapid, is to work with the food you eat with the meal. If you don't eat, you don't need to take the fast acting insulin. Likewise, if you want more than 3 meals, you inject for the additional meals/snacks.
 
Although diabetic a long time I’m no expert, but I don’t understand why you need 3 meals a day? When I was on novorapid if I didn’t eat I didn’t inject!
 


Helpful. I have had some confusing / conflicting advice on this. As of this morning I am learning more about low carb alternative diets which are possible. I'm still learning. I think my glucose levels were also impacted by the associated hypercholesterolaemia (@ 104-115) - but that appears to be going down too - so now i want to explore low card options. as I said - I am here to learn and understand and beat this thing

Helpful - I read the response below first - but the same points apply to this - has anyone had any experience with forxiga too? I'm rattling with all the pills I have to take
 
I am just back from the clinic and I reported that I am eating one meal a day and a small amount with coffee at the other end of the day with 12 hours between.
The HCP was delightful - even perplexed as to why I would ever have been advised to eat a high carb diet - I felt so very old.
I do not need to take tablets, and eat under 40 gm of carbs a day - it might seem extreme to some but it really does mean that I see normal numbers. I feel really quite well for my 71 years and 5 and 1/2 years from diagnosis.
 
If you eat less carbs you may need to adjust your insulin dose.
With Type 1, my insulin dose is based on my carb intake - you may have read about carb counting - I assume the same is true for type 2.
