Help needed, Flax Seed flour

Hi all,
my wife would like to make pastry for a pie but with flax seed flour instead of white flour.
Is it just a case of replacing the flour with the same amount of fax seed flour ?

Flax seeds have quite a high fat content and an "interesting" taste.. I'm not sure it will roll out like pastry without something to bind it. I use it in something like a fat head pizza dough mixing ground almonds and flax seeds together but bound with melted mozzarella cheese. I'm pretty sure it won't bind like white flour does with just water.

if you have a look at the www.dietdoctor.com website you will find some fab recipes there - including some bread and pastry that can be adapted to quite a few things. They even have a range of pies you can choose from. :)

I've just made some cheese flax seed crackers and although they tasted good, they gave me diarrhoea. It certainly wouldn't roll and I would definitely advise against using only flax seed. I'm going to try making the crackers again today with a mix of coconut flour and milled flax seed.
