Hgv driver lunch ideas???

My husband is type 2 diabetic and i really struggle with his lunches and snacks. He is a HGV driver and a plain and fussy eater, does anybody have ideas for somebody who loves his white bread and biscuits but hates pasta, rice and the good food????

When I take a picnic lunch somewhere, I wrap it in a lettuce leaf. I do this with burgers, chiken pieces etc. However, if he won't give up bread, how about looking out a low carb bread recipe? You can buy low carb bread, but it's expensive.
Wraps are often lower carb than bread too. Frankfurters make a good finger food. You can put the sauces into tiny pots as dips.
give me an iedea of specificall what he loves and hates and I'll try to come up with some idea for you.

I do't think rice or pasta are good for blood glucose control.

Backing up Hana here - white bread has had some of the 'goodness' taken out so if you are eating bread then wholemeal and granary are usually better.

However many of us think that all carbohydrates are not a good thing for diabetics.

If you look at food labels you may well see 'Per 100g, carbohydrates 13.5g (of which sugars 2.2g)' [that was me reading off a label I have beside me].
So sugar is a carbohydrate and other carbohydrates transform to sugar quite easily.

So if possible a lunch should be maily based on protein and vegetables.
To help more, we would need to know what his likes and dislikes are so we can suggest which of the 'likes' could be built on.
Fats are also not necessarily bad, or at least not as bad as carbohydrates.
A lot of dietary advice about what is 'good food' does not apply to diabetics - fats suddenly become better and carbohydrates worse.

A lunch box with chicken breast, hard boiled eggs, cold crispy bacon, cherry tomatoes, cold sausage can be filling and low in carbohydrate.

Biscuits are not good, generally.

As in all things, any reduction in sugary and carby foods is a good thing.
It is very hard to go 'cold turkey' on carbs.
Oh, and cold turkey is a good lunch as well :)

I'm fairly good at Organic chemistry and not too bad at biochemistry, so I knw what molecular sructures are and how they convert. I know about sugars I also have a recipe for a low carb bread. It's essentially protein based. I don't often make it however.
Personally, I try to be as low in carbs as I can.
Thus packed lunches or lunches out are usually meat and salad or green veggies. Or cheese or eggs!
I can't remember where I found the "burger in a lettuce leaf" idea, but I didn't think of it myself. It does work well, you can get the tomatoes and gherkins in and stick them with mayo. I should think that for a treat, a nice steak packaged in the same way would work I do accept that people new to low carbing may still want to eat some carbs and my suggestions are for that. I came to my very low carb Way of Eating over time, by gradually cutting back and monitoring blood glucose.
