For dinner tonight I had a battered haddock fillet, with mushy peas and mushrooms. All in about 35g carbs.
Had something planned rearranged so decided to use the free time to finish my current batch baking for the freezer and made the low carb lemon drizzle - good to have a wide range of low carb treats in the freezer for next month or so.

Dinner wild salmon with asparagus then had a portion of the new low carb lemon drizzle.
I love my tortilla press but from my experience I’d recommend putting your dough between two pieces of parchment paper not just straight into the press.Breakfast kefir then mushrooms fried in olive oil served on low carb toast with a poached egg
Lunch cheese, celery, and low carb crackers followed by a couple of strawberries and spoon of yoghurt
Dinner chicken curry with mint raita and chopped coriander - I've run out of home made low carb roti and missed it. I must make another batch before next weeks curry night to finish my restock of the freezer. The last two batches I rolled out myself and it was very time consuming plus turned out odd shapes so I've ordered a cast iron tortilla press to try and make the job quicker plus they may look more uniform! Will share results when manage to make them.

Followed by a piece of hm LC rhubarb and ginger cake.
