I am 34 years old mother of 2, was diagnosed with type 2 diabetes over a year ago and been on metformin 500 mg 2x a day since then. My a1c is 7.5 and sugar isn’t improving but drs won’t change meds, thinking of seeking 2nd opinion.

Metformin is a bit of a crutch to aid blood sugar reduction while you make lifestyle changes.... Check the leaflet, you're supposed to be starting metformin if a lifestyle/diet change hasn't had adequate effect. Metformin increases your insulin sensitivity by a smidge, and it keeps your liver from dumping as much glucose as it normally would have, but it doesn't do anything about what you ingest.... And that's usually where the highest blood sugar rises come from. Mind you, most GP's and specialists don't even let people try a change in lifestyle first, they just prescribe metformin and give little to no dietary information, and when they do, it is often hopelessly outdated. https://josekalsbeek.blogspot.com/2019/11/the-nutritional-thingy.html might help some get your blood sugars back into the normal range, and who knows, you might not need the metformin much longer either.
You're going to be okay. Because even if a change of diet won't do it for you due to circumstances, there's plenty of medications you can still try that have more of a punch than met does.
