This is simple, delicious and low in carbs.
You do need a SHARP knife
Ingredients:
I medium white cabbage. Choose a firm one
2 or3 carrots
1/2 an onion. Red ones are nice
For the dressing:
a cup of low sugar salad cream
small tub plain yogurt( or cream if you like it)
seasoning
Method
Discard outer leaves and cut cabbage into quarters through the stalk.
Shred,Finely using a sharp knife or mandolin slicer. keep the stalk in each section whilst shredding, it holds it together. The sharper the cutter, the safer.
Grate the carrots coarsely
shred the onion
mix the vegetable shreds in a large bowl
add salad cream and yogurt and mix thoroughly.
season if you wish.
I now add raspberry vinegar, when I make it. It has a great flavour.
this dish is largely fibre and water. And possible a passing vitamin or mineral
