I was recently diagnosed with type 2 diabetes. I am a jam and chutney maker and I'm looking for recipes for no sugar jams for e.g using Xylitol. I have trawled through the internet but recipes are limited. Any recipes or tips would be great.
It's difficult to make jam without sugar as that is the preserving agent. I very very occasionally bake and make a form of jam of stewed fruit with sweeteners and zanthan gum to thicken but it doesn't keep more than a couple of days. I do have a recipe for a no sugar green tomato chutney but will have to search for it if you would like it

Thanks for replying. This is the problem I am finding. I might just have to do a reduced sugar jam + xylitol + lemon juice + pectin and keep in the fridge.
I'm having a small teaspoonful of home made strawberry jam right now in a home made full fat creepy crawlY yoghurt and lovely it is too.
A teaspoon of strawberry jam doesn't give me a bad time.
JTL I am so glad you are enjoying your jam and yoghurt. My problem is that I have a number of customers who want sugar free jam, even though I do say to them to eat just a little of the normal jam - everything in moderation.
