Thank you everyone. Telling me about your own experiences, as well as giving your opinions & advice is very welcome. Clearly we ALL try very hard, one way or another, to effectively manage our blood glucose levels every day. Low carbing isn't easy for me & I have at times had to force myself to eat just to get enough calories down my neck. I've been able to carry on with LCHF because I've seen results with my BG levels. But I must admit, the thought of permanently eating this way is just agonising right now. @Robbity...you are right. I need to make this way of eating sustainable. So I will start looking for low carb alternatives of the meals I used to eat pre-diagnosis. I'm compiling a file of everyday simple low carb recipes for my Mam & Dad. I guess it's gonna be sensible to prepare one for me too. @Mongolia, thanks for the pancake recipes. I'll be giving them a go this weekend. I am losing weight through ketosis, & I want that to continue. But my diet HAS to allow for a weekly treat. So, LCHF with a sensible treat seems the way to go for me. Unlikely to binge out that way. I've got to work out my carb threshold, that still produces ketosis, and thus weight loss. Not quite sure how to do that yet. Once again, thank you very much lovely people. Much appreciated.
