Sorry you have so many health issues, but keto should definitely help.
I’ve been eating ketogenically for over 5 years. For me, it’s a simple and enjoyable way of eating. In my opinion it can get over complicated if you start worrying too much about macros at first (or even at all).
The simple rule of thumb for getting started would be to eat single ingredient foods - meat, eggs, fish, some dairy, above ground veg. That way you can’t go too far wrong. Carbs are kept to a minimum and you can pretty much guarantee to be in ketosis and reducing your blood sugars. This means prepping your own meals most of the time (although there are some good ‘on the go’ options). That can sound daunting but slow cookers, air fryers and batch cooking make it simple and easy.

And it so happens that I came across this great photo on Twitter earlier today. Encapsulates everything. Only thing I’d add is depending on how much weight you want/need to lose, go easy with the added fats and just go with the natural fats attached to your protein source - the fattier cuts of meat, for example are cheaper, tastier and lend themselves to slow or batch cooking.
