that is excellent so have you started eating this wat since diagnosis or before? If it is since then I expect you will have reduced your HbA1c to normal or will soon. If you are still losing weight then you have a couple of choices:
1. increase your fat intake, or
2. increase your carb intake a little
They both have some merits. very low carb and high fat has been shown to increase insulin resistance somewhat but it doesnt really matter because you do not need it due to the low carbs and protein
The increased carbs keep your pancreas and liver "exercised" and willing and able.
The choice is yours - your body, your life and only you know how you want to live.
For info I vary mine weekly. I generally medium carb 150g-200g/day but some weeks I will do 90g and other weeks I will do 400g!. Then again there are weeks when I will do very low calorie just to clear out my system. I like to vary and keep it alive.
