Just not bread and potatoes? what about all the other carbs in things like breakfast cereals, pasta, rice, biscuits, crackers, cakes, pies, fruit, parsnips etc. ?
I needed to go down to below 40gms of carbs per day to get into T2D remission. I have a fairly wide range from about 20gms to 40gms depending upon my consumption of things like red wine, berries, nuts and 90% dark chocolate.
