Ice Cream

Nice one!

I use this recipe, but it does need a blender that can crunch up ice cubes. Weaker blenders burn out when confronted by ice or frozen fruit.
I use frozen berries, double cream and erythritol
Perfect for the youngster. We shall do this next time.
 
I have seen lots of threads on diabetic ice cream/Oppo and the like.

I found I had been missing a trick by defrosting berries to have with cream. I added cream to frozen raspberries. The cream froze.

So, with Wimbledon on the horizon, why not slice a portion of strawberries into a bowl, mash slightly with a fork. Add cream and mix. Stick in the freezer for an hour or so. Lots cheaper than shop bought.
And nicer too, sone of those low carb ice creams are inedible.
