I'd like to get more variety of foods..

moved to my Home-State, so happy to be back and have my much-loved 4 Seasons again. Did not like the almost constant, icy winds off the ocean, and lack of shopping options (groceries and other). Did a lot of shopping online and finally gave up on any clothes shopping ;)
..of course without getting higher Blood Glucose.

I looked at a sort of "pyramid" for diabetics, but some of the foods on it are scarey for me. It also told the amounts you should eat, way less than a person that doesn't have diabetes.

I've spent a lot of time on a Keto forum but I feel I need to do more reading about what I could eat to give me more variety in my meals. Any suggestions for foods that I might try that are working for both keeping the weight off, but keeping my numbers for T2 in the safe zones? Some examples of your meals would be great as mine are the same every day, all I change up is my meats. I also take zero meds so I've been very strict on Keto, but I am burned out and looking for more answers on how to do this. Been on for 2 years in January, and lost 29 lbs, all I need to lose btw for my height and bone structure. I am an active gym-member, and love to do walks/hikes as well.

How many carbs are you aiming for?
I make rhubarb crumble using sweetener in the rhubarb and ground almonds with a little butter for the crumble - served with double cream it makes a nice change from Greek yogurt and fresh raspberries.
I cook chicken with lemon or sumac, served with a couple of types of green veg and cauliflower 'mash.
Roast chicken with veg, with some of the juice over the veg instead of butter.
Or chicken and veg in curry with cauliflower rice.
Stir-fried cauliflower rice with mushrooms, a little red pepper and chicken or bacon finished with a splash of soy sauce.
Turkey mince fried with spring onions, then cooked with tomatoes and herbs, served over courgetti with cheese.
Cheese omelette with salad.
Salmon with a squirt of lemon juice served with plenty of green veg (2 from cabbage, broccoli, green beans, etc)
Bacon or ham in 90 second bread with lettuce.
 
I buy frozen stir fry in various forms - I go to Lidl mostly. I sometimes get fresh stir fry, but other than the meat, fish, seafood, eggs, all sorts of cheese, Greek yoghurt, I buy ready made salad, onions tomatoes celery swede beetroot radish cucumber carrots sweet peppers leeks celeriac cabbage green beans aubergine sprouts cauliflower beansprouts courgette bok choy endive and berries rhubarb melons kiwi fruit and plums - not all in the same week though, or even month.

Have you explored online keto recipes? Search anything you like adding the word keto. Find good recipes and then explore the rest of that’s sites offerings

i use an app called “copy me that” to save recipes I find to create my own customisable cook book.
 
Keto has different info on every site I find, and I haven't tested out anything I can keep my blood sugar from spiking. I just don't know how many carbs I could actually eat, and still stay in Keto so I think I just have to try things.

I love your diet, especially a replacement for the same ole Two Good Yogurt (vanilla) w/blueberries and walnuts (quarter cup each of those) 1/2 cup yogurt.

I do chicken often and love the thighs with my seasoning mix. Maybe once every two weeks I'll cook up enough to last me 3 dinners. I don't get bored with my meats. It's more about breakfast and lunch. I don't worry about the whole fasting thing because I've lost the weight and good HbA1c, as well as occasional daily checks.

I need to commit to making some cauliflower mashed taters, and an occasional pie with Almond Flour, or maybe coconut. Just need to get willing ;) Forgot to mention I have tried to stay under 30g of carbs but sometimes lower, sometime over. I'm pretty timid about going over, T2 scared me into a low-carb diet.

I am definitely going to look into some of your foods to try out, thanks so much!

They must as I think your numbers look good in your signature ;) I'm in US so I don't know of a Lidl Market. I think we have some good ones, including a Health Food Market.

Yes, I'm usually cruising the net often for foods/drinks. I'll see if I have access to that app, it would be good to organize what I find ;) Thank you! Now all I have to do is some further shopping, definitely want to get some cauliflower. I owe a lot to keto and I'm sure I can stay within the boundaries and still add some things I have yet to try ;) Thanks again to all that have given me some ideas,

I've recently spent some time in the States,, with a good deal of it hunting for Keto goodies, but I came home empty handed as what there was was heavily processed and used loads of ingredients I don't trust.
We did find a wider selection of good cheeses than we'd seen before, and some very dark chocloate bars. Chicones (pork scratchings to us) are a good low carb snack and adds a satisfying salty crunch , particularly as a "breadcrumb" coating.

The frozen stirfry options are low carb all three are under 10 percent, but I usually search for the lowest two. I suspect that it is far harder to find low carb options in the US - my daughter lived there for a few years and found it really difficult to find what in the UK are ordinary foods.
I really don't know what to suggest as a source of ready to cook foods - it might mean a lot of searching the nutrition information on packs.
I do have a fair few kitchen gadgets which help quite a bit to keep preparation times down to reasonable lengths.
