I have oven chips occasionally. Not many, about 10. I weighed them and the carb content was only about 7.5gm. They didn't spike my blood glucose. But the only way you can find out if they affect you is to test before eating, then 2 hours later.
I can eat half a dozen chips, maybe up to 10 depending what else is on the plate, but they have to be done the old fashioned way. From scratch, at home, fried in lard. The problem with oven chips is they have already been fried - in nasty cheap vegetable oils, which is probably worse for us than the carb element of the potato.
