(I'm a scot, too, by the way!)
I'm not familiar with the names of all the insulins, but is the regime you are on a basal/bolus regime? In other words do you inject one long acting insulin once or twice a day, coupled with a rapid acting insulin with meals?
If not, I would contact your DSN and ask about this and then ask about a DAFNE course. This style of insulin regime might give you a bit more flexibility about your diet and allow you to have the occasional treat.
BUT, in the meantime, you need to have a good talk to yourself. As an educated woman you know you're not doing yourself any favours eating this way. You know about the complications that could come up - at worst losing your sight or having a heart attack. Coming here for advice and support is a first step and hopefully you will be able to move on and take control.
Contact your DSN without delay and ask for help!

If it's 2 injections a day it's a mixed insulin regime which is very restrictive, no way you can adjust for the occasional treat. You have to eat at the same time every day and more or less the same amount of carbs. I'd agree with you Lady J, that Bella would be better off pushing for MDI or Basal/Bolus regime.
Sadly DAFNE isn't universally on offer in the UK.... the old postcode lottery strikes again! For more info on DAFNE see

Of course if it's not on offer Bella you could always do the on-line BDEC course on carb counting. There's a link from the page I pointed you to.
