Inauguration of IP!

@DCUKMod what pressure level do you use for that “aspic” broth? I have three to choose from, and another control that also seems to have 3 levels. I like your method!

High pressure all the way, and don't forget to add a little apple cider vinegar to get all the goodness from the bones.

It works for me. The prospect of trying to get a vat of goodness cooled enough to deal with in an evening, or clearing up later in the evening simply doesn't raise a smile in my world.

I can be such a lazy cook that the lob it in, and leave it alone techniques work for me!

Go @carol43 go!!! I have a very serious storage problem but don’t much like gadgets so pretty safe for a while...the IP seems to me less of a gadget and more of a thing that allows you to have fewer large pots hanging around. Very versatile and all I can say is it had better last a LONG time! :hilarious:

Cooked a whole chicken in my new IP and I used the rack. Don't understand how I can cook a whole chicken in 18 minutes. It was lovely and tender with enough left for lunch for both of us tomorrow. Bones and bits in the freezer for broth. Have ordered

Keto Instant Pot: 130+ Healthy Low-Carb Recipes for Your Electric Pressure Cooker or Slow Cooker
More lovely recipes to try. I love new gadgets but I need a bigger kitchen.

I must admit we reshuffled the kitchen a bit when the IP came to live with us. Fortunately our kitchen is pretty generously sized.

There are so many bloggers with IPs out there, and on that basis, I haven't bought any books. I just Google "low carb x, y or z Instant Pot" and usually something comes up.

If you guys are meat eaters, I have a few fab go-to recipes

@DCUKMod if you can say “you guys” could I teach you to use “y’all”? :hilarious: :hilarious:

Apologies for the delay, @carol43 - they day took me over, then sleep won! In no particular order, unless comments are made, these are a few goodies; to our tastes anyway.

https://www.wholesomeyum.com/recipes/low-carb-chili-in-crock-pot-or-instant-pot-paleo-gluten-free/ (May need a bit of tweaking on the seasoning, for you, but the texture and general yummyness is great.)

(Yes, we like spicy food!!)

http://www.feistytapas.com/2017/02/homemade-vegetable-stock-paste-instantpot-thermomix.html <<<<< I use this all the time, as I can be prety rubbish on seasoning, and it seems to take care of a lot of that business. I also use it as a means to clear the vegetable decks from time to time, so have varied the ingredients, quite a bit. For me, it's a 100% keeper for throw in the pot and see what comes out - like a couple of chicken portions, a few veg and off we go.

https://www.feistytapas.com/2016/12/instant-pot-pressure-cooker-baked-camembert.html (Still on my list to do, but I bet it's good. This blogger is an IP employee, so he stuff is usually very reliable)

https://saffronstreaks.com/recipes/homemade-hot-chilli-garlic-sauce-and-forget-your-sriracha/ (<<< when I made it, this was HOT, so only a little required for a big hit)

https://queenketo.com/keto-beef-shin-creamed-brussels-sprouts/ (This was one of the first things I did in the IP. It usually needs a little reducing at the end, on saute, but it is very delicious, from a cheapo, cheapo cut of beef)

https://myheartbeets.com/indian-onion-masala/ <<< htis is a great base for all sort of curries. It isn't spicy, but provides the starter for thr gravy element, so just needs the spiciness added in with whatever meat.

It looks like a lot of gravy at the end, but I portion it up and freeze it, thenbring it out to make a quick fakeawat when we want it.

@DCUKMod
Thanks for those. Got BIL coming today for his yearly visit so I'm trying a pot roast with my bone broth, onions and carrots with some mushrooms thrown in 15 minutes before the end (and I won't eat the carrots). Celeriac dauphinoise and cauli, cabbage & peppers covered with cheese. Strawberries & d.cream. BIl has diabetes but doesn't do anything about it so I won't feel guilty about giving him something he should eat.
