Ingredients purchased......

As my link was removed due it being offensive, here is the recipe for the low carb chocolate cake (which I now live off)

Ingredients:
100g ground almonds
1 teaspoon baking powder
2 large eggs
1 tablespoon of melted butter
2 tablespoons of double cream
2 tea spoons of cocoa powder
squirt of (low carb) liquid sweetener.

Mix all dry ingredients in a bowl. Almonds, baking powder and cocoa powder
Melt the butter add the eggs, cream and liquid sweetener then add the dry ingredients and mix well. Pour mix into a micro-wave safe dish, cook at 700 watts for 3 minutes(depends on microwave mine takes 7 mins). Allow to cool and cut in half. Spread on double cream.

Enjoy , delicious!

Do you have to allow it to cool? Can't you just eat it straight out of the microwave safe dish with a big spoon? :lol:
 
I bought some coconut flour from an asian shop in my nearby city. Its about a 40 min drive, but I got 1kg for only £2.99 thats less than half the price online, before carriage. Well worth a drive, and as its lasting ages, I probably wont have to go again till the new year. Their ground almonds were abit cheaper than tescos too. I paid something like £6 for 1kg. Not cheap but again they last a while.

I really like the 3 minute microwave cake I found on here somewhere;

2 tbsp butter, melted,
2 eggs
2tbsp ground almonds/ or 1 heaped of coconut flour
2 tbsp of cocoa powder
2 tbsp of sweetner
2 drops vanilla essence
1/2 teasp baking powder

melt the butter, allow to cool a bit then whisk in eggs, then whisk in the rest, bung in the microwave for about 3 minutes. I use an old plastic takeaway tub, perfect size.

Sometimes I replace the cocoa with dessicated coconut and add a few glace cherries. Or you could use orange flavouring instead of the vanilla. Loads of possibilities.
 
We use Lidl and Aldi, they are German shops and Germans love their meat, hence the quality.

Haven't tried to be honest. I've always allowed it to cool for at least 30 mins so it's nice and spongey. Might give it a go tonight
 
OH ... MY ... GOODNESS! How quick IS that to make? Ten minutes ago I was sitting reading the recipe and now I'm sitting here with a slice of it marvelling at the simplicity of it all.

I didn't have any Splenda or sweetener so I had to use Agave Nectar so it's not strictly low carb but I had to use something. I didn't put enough Agave in so it's not as sweet as I'd like it to be but for a trial run it's good enough. I also used single cream as I didn't have any double and I added about 40g of dessicated coconut to it and a generous sprinkling of cinammon.

Four minutes in my 700w micro and it was done. It's lovely and light and spongy and I've poured half a small tub of Devon Custard over it to sweeten it up - but I'll definitely get the Splenda next time round. It's a very versatile base and I could also add different flavourings to it, maybe a bit of lemon or orange zest, bit of alcohol.

I have been making this cake for a while now, its amazing with a dollop of clotted cream, I usually have it straight from microwave so it's like a chocolate melt sponge. Mmmmmmmm
