The advice to test before and 2 hours after eating is for Tupe 2 diabetes. It is not for Type 1.
For Type 1 insulin dosage you need to know your insulin to carb ratio and your insulin sensitivity. These ratios are personal. Typically, your diabetes team recommend starting ratios from which you can tweak.

We cannot advice on insulin dosing here, that's really something to discuss with your doctor or diabetes nurse.
The basal should keep you more or less steady when you don't eat, the bolus should deal with the carbs in your food.
What is the advice you've been given by your HCP on adjusting your doses?
