Insulin resistance, pre-diabetes or diabetes??

Hello all.. I'm a 36 yr old who was obese for years. Was around 200lbs but recently managed to get down to 160lbs. I always did have a high-carb/sugar diet but reduced them dramatically which is how I lost 40 lbs. I also work out frequently. During the years, I'd have lab tests to check for blood glucose, and would be usually between 85-92 when fasting, so I assumed I was alright. Now that I'm being more proactive with my health, I purchased a blood glucose monitor. When i eat healthy/low carb my blood sugar usually stays below 110mg. However, I have had my cheat days. To my surprise, my blood sugar spiked up to 170mg with pizza, cereal, oats, and rice. I know these are high carb, but I was concerned that my blood sugar went from around 88 to 170 with these foods. I checked continually for 3 hrs. My blood sugar would take about 3 hours to go below 140mg. Now my concern is whether this sounds like insulin resistance, or pre-diabetes? My fasting BG is usually around 88mg. I'm also doing intermittent fasting in which I eat in an 8 hr window and fast for 16hrs. Thanks so much for your help.

Sounds pretty normal to me.
 
First of all congrats on the weight loss & being proactive by getting a meter.
All those foods are top of the carb food chain & as you can see they just turn to glucose in your bloodstream.
The spike to 170mg/dl doesn't worry me, I've seen plenty of non-diabetics spike higher on oatmeal & cornflakes.
Taking 3 hours to come down <140mg/dl might warrant further investigation.

What's your most recent fasting & HbA1c from your yearly bloods.
Perhaps ask your doctor for a 75g OGTT if you're really worried.
 
I think then my only concern is how long it takes for BG to go lower than 140. What's an Ogtt?

The Oral Glucose Tolerance Test.
You attend a doctors surgery after fasting for X hours & drink a 300ml solution that contains 75g of pure glucose.
They take your bloods pre-test & 2 hours later, if you're < 7.8(140) @ 2 hours you're considered not diabetic.
It's the ultimate dynamic test but has fallen out of favour as it takes up time & staffing in surgeries.
