A number of people on this board seem very concerned about short lived spikes in their blood glucose, say after eating some fruit or high carbohydrate food.
What is the problem with these temporary rises in blood glucose ? Do they do us any lasting harm?
I would have thought that the base level of blood glucose was the main factor in causing damage to tissues, rather than a short-lived elevated level. After all, non diabetics eating lots of millionaires shortcake will also have a temporary spike in their blood glucose, and no one seems worried about that.
