I follow a regime of around 30g carbs a day but over the years have also become aware that my BG response also varies with some v low carb count foods producing an unexpectedly strong BG rises and conversly some at the higher end producing an unexpectedly modest rise, if any
Im on hols at the mo and am enjoying experimenting in the sun with a) different grains and b) resistant starch concepts
a) Yesterday 6 of these https://www.ocado.com/webshop/product/Peters-Yard-Pink-Peppercorn-Sourdough-Crispbread/330209011 with goats cheese produced significant decreases in Bg at 1,2 & 3 hours post prandial - unexpected but v welcome result for 16g carbs - The same from wheat bread / crackers and cheese would have been a 4 point increase. I think the sourdough and non wheat flour make a difference
b) today 1/2 pkt of this https://www.tilda.com/our-range/steamed-basmati-rice/brown-basmati-quinoa/ fried with olive oil, mushrooms and courgette to make egg fried rice saw slight (0.2-0.4 mmol) drops of Bg at 1&2 hours, 3hr test pending. 30g of carbs in one meal would generally send my sugars stratospheric. I can only see the resistant starch issue from using pre cooked ricee makes the difference, unless of course my BG’s are on holiday too
Edit - 3hr results are in - 0.3mmol increase over the pre prandial reading
