Almonds have carbs and coffee has caffeine. Caffeine raises cortisol levels which spikes blood sugar.
However, I think coffee is fine once you have your sugar levels in order (under 120 mg/DL average) since coffee doesn't ADD new sugar in your body but does make your body use up it's stores of it. It's bad in the short term if your goal is to get your blood sugars low but I believe (my opinion) that once they are under control that the spikes it creates will be insignificant and actually helps to get your stored glucose out of your system. Just a cup in the morning is fine, no need to go overboard.
Also, it will take time for your body to bring your levels down. Just because you changed your diet dramatically does not mean you have gotten rid of the non-critical stored glucose in your body. My first few weeks I was barely getting below 200 mg/DL but now am regularly in the 120 range after 3 months. Only spikes are about 140 range if I have a little carby stuff or coffee and sometimes morning tests (though those are now mostly 130 range).
