Ive lost the muffin thread!

Help, Ive searched and searched and cant find the thread I came across for making muffins with ground Almonds. Ive even bought the Almonds so Im ready, but its gone, vamooshed, never to be seen again. Can any one point me in the right direction pleassseeee?
 
Nope, but it does sound yummy tho :)
Think the one Im after was just plain muffins with almonds instead of flour, Im on my mobile as my pc has broke so I couldnt even copy it, which normally I would have done.

250g ground almonds
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
vanilla essence/extract
a squeeze of lemon juice
150g unsalted butter , softened
15g of sweetener of your choice
2 large eggs
200ml greek yogurt or soured cream/creme fraiche
120g blueberries

combine the ingredients just as you would any muffin mix and divide mixture between 12 muffin cases and cook for about 25 mins on on 180.
 
Aha yep, thats the one, I will have a go tonight.
Im wondering now if they could be made with grated cheese in the mix.

They're now in the oven - can't say I'm optimistic though as the mixture tasted a bit odd.

No, more like pea-shingle odd.. they're out of the oven now and I'm waiting for them to cool down to try one - will let you know..

I actually thought the mixture looked disgusting. I won't say what it reminded me of. (metformin side effects :oops: )

You should try the choc chip cookies too. They're not awfully crunchy but they taste nice and satisfy the urge!
 
Well I made them and I've eaten one. They look really nice and they tas.. well they look really nice.

You know that moment when you take a swig of a cup of tea, but are expecting it to be coffee. Well these look like muffins but taste like, well sort of bread and butter pudding without the fruit, or the sweetness or custard.

Hmnn, did I mention they look really nice?

You could try:

Low-carb ham and cheese muffins (adapted from high carb recipe):

280g ground almonds (about 18g carb)
2 tsp baking powder
Pinch of salt
100g finely diced ham
140g grated mature cheddar
2 eggs
250ml milk (about 14g carb) (you could use half water to lower carb further)
4 tbs oil or melted, cooled butter (I usually use ground nut oil as it's quite bland)
Fresh ground pepper to taste

Preheat oven to 200. Line 12-hole muffin tin with paper cases. In large bowl, mix ground almonds, baking powder, salt and pepper to combine. Add the ham and 100g of the cheese and mix them in. In another bowl, beat the eggs then beat in the milk followed by the oil/butter. Pour the wet ingredients into the dry and mix to combine. Use a teaspoon to put the mixture into the muffin cases. Sprinkle the reserved grated cheese over the top of each muffin. Bake for about 25 minutes. I think these have about 3.5g carb each although I wouldn't swear to it! (But they don't affect my BG much). They freeze well but they don't keep well unfrozen, so freeze as soon as they have cooled.

Maybe you could still use them sliced up and layered with nice thick cream and berries.
