Joanna's spicy tuna Libby burgers

Ok, the name comes due to me making them they are spicy, have tuna and I got the basic crispy coating recipe from wiflib.

I forgot to take something out the freezer yesterday, for dinner tonight, so had to make something from what I had available. I came up with these.

30g Chia seeds
2 tins tuna
2 heaped tablespoons of Parmesan cheese
1 level teaspoon of arrowroot
1 heaped teaspoon Garam Masala
1 teaspoon garlic powder
salt and pepper to taste

Put the chia into a quarter of a pint of water, leave it to swell for about 10-15 minutes. Drain the tuna, then add to the chia seeds. In a separate bowl mix the Parmesan, arrowroot, Garam Masala, garlic powder and S&P. Mix until all combined. Take a small amount of the tuna mix and shape into a ball, coat it in the powder mixture, then flatten to make a burger. Do the same with all the tuna mixture, then fry. I used avocado oil. Turn and fry the other side, when completely warm and cooked through, serve.
 
Sounds very nice as I love tuna, just one thing don't use garlic powder when you can use the real thing......much tastier and better for you!

Usually I would absolutely agree with you, but as you need the garlic on the coating, it's not possible.

I should add, the chia is added to bind the tuna so it can be shaped, but seeing as it's another sneaky way for me to get chia into the rest of the family, it serves two purposes. :wink:
 
Does it hold together well? I mixed fish with a mix of mashed cauli and turnip and although it worked well, I had to take care when frying them.

I'm going to add an egg next time, make the mix into smaller balls and deep fry them.

The chia makes it hold together really well, I was impressed as it was me playing around a bit. I don't eat a lot of eggs, but soaked chia is an excellent replacement, and the burgers were really nice. I had mine with a plate full of veg - yum!
 
I made those fish balls tonight and they were a success. Because I hate to faff, I just bunged the ingredients in a food processor, dipped balls of the mix in the coating and deep fried them in dripping.

2 fillets of fish. I used river cobbler because it's so darn cheap.
2 spring onions
1 egg

I also added, because I'm running the contents of my fridge down, a few salted capers, a bit of turnip, a couple of pickled garlic cloves and flavourings.

They turned out crispy and lovely and made loads.
