Just Got my Casual "Oh your blood test showed prediabetes"

Don't forget you are only on the cusp of pre-diabetes, so there is unlikely for you to go full-on, Ninja keto, or low carb for that matter, but cutting back on the bread, rice, potatoes and pasta would be a great help.
Ok I'm really not trying to be rude but when I say I can't eat gluten that includes pasta and bread. :)

I spent part of last week testing recipes for low-carb, nut-free vegan cake and nut-free veggie cake for an event where someone had a tree nut allergy another was vegan and I'm low-carb.
If you don't bake maybe someone could do these for you? Store in the fridge for a few days or freeze in portions.
Note I find all the cake recipes too sweet now so I cut down on the sweetener, and I mainly use xylitol which is not as sweet.

This was the vegan winner:
and for the icing, I added a little lemon juice.

and the nut-free keto cake with an avocado-based filling:
NB The avocado filling was too soft, so I added a little melted 90% chocolate.

Many people who don't eat gluten do eat pasta and bread, just gluten free.
Ah yes but if you read the ingredients of gluten free bread, it's bad. Not good stuff in there. And only gluten free pasta I know is rice pasta. I don't trust rice and try to avoid it.

Being strictly GF myself, I am crystal clear on where gluten hides, however gluten free bread, pasta, biscuits and so on are available in our mainstream supermarkets.

When I had to go GF, I decided not to seek gluten-free variants. I've just given them up, but it is out there.

Yes but the ingredients are a long list of bad stuff.

I calculated how much calories I need to maintain my skinny weight so I probably need to add 500 calories to it to gain weight

You are not skinny. Your BMI is just below the middle of the 'good' range. I suspect you are one of life's extomorphs. Whatever you do, you don't want to gain fat, visible or viseral.

You can gain muscle if you work out with weights - not cardio - at a gym, and eat plenty of protein.

What sort of bad stuff are you thinking of?
Carbs for one thing

Here's the list of ingredients tho. Bad stuff in bold:

Water, Gluten Free Blend (modified Tapioca Starch, Potatostarch, Brown Rice Flour, Corn Starch), Mid Oleic Sunflower Oil, Sugars(evaporated Can Syrup, Cultured Cane Sugar), Psyllium Husk, Egg-whitepowder, Pea Fibre, Modified Cellulose, Yeast, Sea Salt, Cellulose Gum,white Vinegar.

What is that the ingredients for though? Did you filter on Low Carb or Keto?

I don’t understand what you are asking
You list ingredients. I asked which recipe they were in?

If that is a list of ingredients used in a number of her recipes, then just ignore that particular recipe or make a substitute. In my world, recipes are ideas or guides, not laws.

That’s in gluten free bread

I've never looked at it. Bread never did anything for me, so gluten-free or not, I haven't eaten bread for 10 years. I don't miss it.
Why did you ask me about the ingredients for gluten free bread if you don’t eat it? I’m blocking you for wasting my time

Just in case you are still reading (me), you posted a list of ingredients without identifying what they were to make.

However, no worries.

I wish you well.
