Hi, joined the forum today. Had a look around and find there's loads of useful stuff around.
My hubby (54) was diagnosed type II about six months ago and was told he could control it by diet. He is overweight, with at least two stone to lose, and has been doing well the past few weeks. However I, not being a good cook, have problems knowing what to give him for dinner. I have been packing a lunchbox for him every day with a salad (with either cheese or chicken), with an apple. Dinner is either chicken with salad or vegetables (he wont eat many veg and hates fish!). He has now got to the stage of being bored and is gradually going back to his 'old' ways of eating rubbish.
Can anyone out there help me with suggestions for dinner (and maybe lunchbox) to make them more interesting?
He is getting exercise now in the form of our new dog which is one less thing I need worry about.
