keeping hubby happy on a diet?

Hi, joined the forum today. Had a look around and find there's loads of useful stuff around.

My hubby (54) was diagnosed type II about six months ago and was told he could control it by diet. He is overweight, with at least two stone to lose, and has been doing well the past few weeks. However I, not being a good cook, have problems knowing what to give him for dinner. I have been packing a lunchbox for him every day with a salad (with either cheese or chicken), with an apple. Dinner is either chicken with salad or vegetables (he wont eat many veg and hates fish!). He has now got to the stage of being bored and is gradually going back to his 'old' ways of eating rubbish.

Can anyone out there help me with suggestions for dinner (and maybe lunchbox) to make them more interesting?

He is getting exercise now in the form of our new dog which is one less thing I need worry about.

What are his 'old' ways? Is there any way you can adapt some of these 'old' favourites into more healthy options.I am having a constant battle with mine to diet and I'm losing!!One thing though,if it's not in the house he can't eat it!!
 
I think you have to look at likes and dislikes.

Limit the carbs and fats, cook simply, and remember there are few calories in pepper and chilli, herbs and spices.

I got my hubby to eat spinach by wilting it into savory mince.
Just watch out for processed food, it's loaded with sugar and salt.
Introduce new foods alongside of old favourites.

Mash cauliflower into potato: you can serve twice the portion size and keep the carbs low.

Watch out for the fat in cheese.

And who doesn't like fish fingers? if you spray them with olive oil and bake them, they taste as good as fried.

Oven chips will have less fat that deep fried.

Buy an oil sprayer: use it to lubricate pans rather than drenching them in oil.

Don't fry, grill. Don't roast, broil.

Millions of little tricks. Remember, no food is bad food if the portion size is kept right.

Weekends are the worst - especially Sundays which is 'donut day'. Managed to persuade him not to eat these this Sunday - had an apple pie instead. Stil not good I know but at least it was a 'low fat' version ahd he only had one, instead of the usual three donuts!
