I do prefer thick soup. By thin would it be more like Chinese soup where it’s more watery?It's a thickener. Do you really need your soup to be thick? If not, just leave it out. Many chicken soup recipes don't use a thickener at all, and are keto by nature.

I hope someone else can help you out here, as I have no experience with anything except flour or cornstarch to slightly thicken soups.
Myself, I like some of my soups thickened with a little plain flour. I need very little of it, so the total carbs for a big pot of soup would still fit in a keto diet, depending on the other ingredients.

You could of course change your title from 'Xanthan gum' to 'Best keto chicken soup' or such, to attract answers by people who've never used xanthan gum but know everything about chicken soup!

Did I mention I was Squamish. Chicken feet put me off about as much as Xanthan gumAlternatively, you can thicken chicken soup by boiling chicken FEET with the stock for a minimum of 30 minutes. Chicken feet are filled with gelatin and thus act as a thickener. Gelatin is also good for a skin and nails. This is a trick that my grandmother showed me years ago.
