Hello, I’m new to the diabetic keto diet and I’m struggling to stick to it. One meal in particular SUPPER. Religiously at 9pm each night my house sit down to supper. Yum. Before this pesky prediabetic diagnosis it was something like toast, chocolate, crumpet something like that. I can’t find any suggestions for a keto supper. I don’t want meat, eggs or cheese before bed. Any suggestions?? I love this snack before bed without it I’m hungry and can’t settle coz all I can think about is food when I’m trying to sleep. Suggestions would be very welcomed

Can't you just delay your main meal until then?
Or fill up on fats during the main meal and you shouldn't need anything extra.

Great I will post you a couple of recipes tomorrow one similar to a scone, one similar to a muffin Would make a great supper Low carb, I am type 1 and can eat either of these no problemYes I like baking, I’m not a master baker and had a few disaster microwave cakes since starting keto but I make a mean scone.

I have a fan oven and usually takes 25 minutes in a Bundt tin, longer in a loaf tin at 160 degreesHello
This recipe I adapted from something similar and have made for the last 3 years. Even my non diabetic friends like it, obviously not cake though but they like it and it’s low carb. I refer to this as my ‘scone’ recipe
oven 160 degrees
200g ground almonds
3 tablespoons coconut flour
1 tsp sea salt
1.5 tsp baking powder
1 tablespoon honey or agave
1 tablespoon apple cider vinegar
30g coconut oil
5 eggs
place all dry ingredients in a blender or bowl, mix
Lightly beat eggs and add all other ingredients Blitz in blender for a minute until combined
If you don’t have a blender just make sure the eggs are beaten before adding to the dry ingredients and mix everything until well combined.
Grease a loaf tin with coconut oil or a Bundt tin looks lovely when baked.
Cook at 160 for 35-45 mins depending on your oven Should be golden on outside when turned out and just cooked in the middle, use a skewer to check, if you over bake will be a bit dry. Lovely hot or cold with cream or creme fraiche
