To be fair, members of this forum did recommend the low carb way of eating to you a year ago. It has just taken you a while to come round to the idea. Good luckBizzare isn't it. My diabetic nurse tells me bread and potatoes pasta etc are fine so I spent the last year eating them as I please. Shocked to find out tho that my hba1c is now 42mmol

Oooooh never thought about chicken curry I love that. How did you make caul mash ?
CE may have a different recipe, but all I do is boil the cauli florets until soft enough to mash, then mash as you would potato with grated cheese and a knob of butter, season to taste.
Not everybody can afford the book.The book just makes so much sense
Do you use frozen cauliflower or fresh? Only if you live on own sometimes a whole cauliflower will go off before you have finished it? I like Cauliflower with cheese but could not eat it everyday!
