LCHF amazing book

Bizzare isn't it. My diabetic nurse tells me bread and potatoes pasta etc are fine so I spent the last year eating them as I please. Shocked to find out tho that my hba1c is now 42mmol
To be fair, members of this forum did recommend the low carb way of eating to you a year ago. It has just taken you a while to come round to the idea. Good luck :)
 
Root veg seem to be one of those transition areas that some can take and others can't. I have carrots and parsnips rarely (love(d) roast parsnips) but I thhink carrots are best raw for diabetics - or was it the other way round? :confused:

We had savoury mince made into a shepherds' pie with cauli cheese mash. Mr. E had to ask if it was real potato or not so a winner!!

CE may have a different recipe, but all I do is boil the cauli florets until soft enough to mash, then mash as you would potato with grated cheese and a knob of butter, season to taste.

Yes that's what I do.. Sometimes I use a dollop of creme Fraiche too or some cream if I have it. Pop on top of shepherd's pie and sprinkle with more cheese or just have as mash on plate with sausages and gravy or roast dinner. It's delicious with slow cooked lamb and green beans.
 
Do you use frozen cauliflower or fresh? Only if you live on own sometimes a whole cauliflower will go off before you have finished it? I like Cauliflower with cheese but could not eat it everyday!

@izzzi If the book gets Turvell on track and he can afford it, who cares? Plenty of food info on the doc's site which is free of charge.
 
The book is not essential but gives you a lot of good reasoning if you are unsure. You can get it second hand online. It's just a good eye opener

I use both. Tbh frozen is cheaper and perfectly ok if your just mashing it. Just make sure you drain it well. Also fresh cauli does keep ok in fridge quite a while I find. Just remove any excess leaves and pop in salad drawer.
 
Thanks for that information! However, have found that cauliflower has not always kept very well and ended up wasting half of even a small one.

I have ordered book, I know you can see information on forum or diet doctor but sometimes it is easier to read a book, or have it in front of you when preparing a recipe, also have a friend who can share it with!
