Hi Guys, can anyone give me some tips please. ive just started to eat a low carb diet (started Monday) and i am due to travel to my daughters on Sunday which is a 5 hour road trip. Now usually, i make myself some sandwiches, take some crisps, fruit and something sweet and a bottle of orange juice JUST IN CASE. Obviously all this is a no no when on a low carb, so can anyone give me some ideas on what i could take with me to eat on my trip. i dont want to ruin all my hard work so far. :)
 
Babybels, mini cocktail sausages, nuts, cherry tomatoes, cucumber, olives and chocolate balls. See recipe:

Chocolate balls - LCHF
Ingredients
100g butter
150g Chopped nuts
150g coconut (+ 50g extra)
1/2 tsp vanilla essence
50 g 70% dark chocolate
2 tbsp double cream
1,5 tbsp coffee

Method
Melt the chocolate and mix with the coffee and cream.

Put 50g of coconut to one side.

Put the butter, nuts, coconut and vanilla essence in a food processor and mix. Now add the chocolate mix and mix.

Roll into balls and roll in the coconut.

Thanks @Scandichic , what is the carb content of the choc balls? ( i dont really care cos im gonna make them anyway as they sound delicious!!!) LOL ;)
 
Tinned salmon mashed, cherry toms, boiled eggs, pickled onion, cubes of hard cheese. Mayo in a separate container. All you need is a spoon.
Or a 2 egg-mayo instead of the salmon.
 
Easiest I find for a road trip is prepackaged chicken pieces and cheese slices (available at all m&s services), coffee with whipping cream (Costa) and or water. I personally eat a lot less on road trips now, used to eat crisps, nuts, sandwiches, pasties, you name it - don't miss them at all now.

Do people need to eat on a 5 hour journey, its just like going from one meal-time to another surely?

before i started with the Low Carbs, i was having to eat every 2-3 hours!, im finding that i can now leave it at least 3 hours before i need to eat, plus i also make sure i eat regularly just to stop my bloods from going too low. I always thought it was best to eat at regular intervals, obviously some can go longer than others, but that doesnt work for me at the moment. :)

I'd suggest you invest in a few little clip top containers so that you can make a few snack pots of cheese, nuts, meats, cooked bacon, cooked sausages; all those sorts of things. It's just a case to stepping back and thinking what you would normally eat in a day, and how you make that ( or a variation on it) easy to transport and eat without laying a table or fuss.
