2.7lbs is nothing to be concerned about. We can gain or lose that much in a day depending what time we weigh ourselves. But you have had good advice above. You are stressing too much.

Sorry to appear a pain but quoting an average day is still not a lot of good. If you really want good advice, keep a food diary and list exactly what you eat and the amounts for a while. Without wishing to appear negative, unless you record things, little snacks can sometimes be overlooked or portion sizes can get out of hand.Average day would be Greek yogurt for breakfast or noting if I'm not hungry. If the only veg I was eating every day was mushrooms (virtually nil fibre) then I would be seriously constipated - and that could easily explain the weight gain.
Personally, I probably eat 500+ g of veg and 50-100g berries a day.
On a day when I eat a green smoothie, I have that amount by the end of lunch, then eat another 300g with my evening meal.
Eating low carb does NOT mean eating only fat and protein.
It is an opportunity to eat masses of filling, satisfying salad, veg and a bit of fruit, resulting in (IMHO) a far more nutritious and varied diet than when half the bulk is taken up with nutrient deficient carby pap.

.... but small amounts of these with vegetables are much better than the standard NHS advice of carbs with every meal.
AFAIK Pipp, there's actually no harm in eating carbs with every meal if they are part of your LOW carb veggies and berries. I prefer to spread mine out if possible to avoid giving my pancreas too much work at one tinme.

It could be that your not eating enough. But also it could be that you ARE losing fat, but gaining muscle. Muscle weighs more than fat. Have you found your clothes are looser?
