@forge its going ok im really focused at the moment but wake up every morning with a headache. My distraction is Facebook there are a few games i like to play on there as it is school hols i do find i have a lot of time on my hands as i don't work during the hols. I am a scout leader so i spend a lot of time perusing the net for things to do with them. It will be in about six to eight weeks time that it will start to get hard and i start to waiver. Talking on here is helping too. Gonna make the chocolate cake today.

I can't stress taking on something totally mentally absorbing enough. It is the difference between doing it tough and doing it easy.
 
In 4 weeks time I am going to potentially buy my wedding dress. I need to make low carb work because I can't keep putting weight on with the insulin. My diabetes has made me dreading my wedding. I would love to have support to make this work. I miss carbs. When I think that I will not have pasta or bread again it's like my body craves it more which then makes me not stick to low carb. I swear sometimes I feel I rather be dead than having to do this
 
This is why I struggle too I love pasta and rice etc and bread too. Having family around stuffing biscuits and cake doesn't help either but i am determined to do this as i am so overweight being over 21 st. So far this week have lost 3lbs so doing great but just gonna concentrate on the food at moment and hopefully everything else will fall into place. Just eating full fat greek yoghurt with raspberries was a delight for breakfast, so used to being told to have no fat or low fat. As long as I see or get results i should be fine as soon as it starts going pear shape i tend to give up and go back to old habits. Not this time though feeling very positive. Im going to start making my own sauces too so if anyone has a good low carb recipe for tikka masalla or bolognaise i would be very grateful.

the chocolate cake! lush or what!!! can defo see myself making several of these every week. Make a nice dessert too with a bit of greek yoghurt dolloped on top. made it in a small microwaveable glass desert dish. It filled it right up really feel like ive had something substantial. taste like choc cake without all the sugery sweetness. I think this is going to work!
 
Yep chocolate cake, I am glad you liked it.

Not only but also, you can have icing on your cake.

Mix sweetener with cream cheese and lemon juice or lime juice.This is also superb.

But for chocolate cake you might find peppermint or cocoa better - the discovery is the adventure so I can't tell you too much.

I am not far off. I come in at a hefty 18 stones now :( I am Mediterranean so we grow up on pasta and freshly baked bread etc. But you are right we must not give up.

I am convinced the way to win is make it enjoyable fun.

We used our slow cooker for the first time tonight.

I cut up some chicken breast and cabbage, carrots, celery and pumpkin put it in the cooker added a tray of chopped mushrooms and a packet of onion soup and 1/2 litre of coke zero. slow cooked it for 5 hours. Tasted great good texture and it was easy to do and easy to clean up.

Vewwy impwethive.

@jack412 thanks for the recipe link they all look lush gonna try to make some today. Gonna have a go at changing the choc cake into a lemon cake by changing the cocoa to almond and the water to lemon juice will post how it comes out. 4th day on lchf and do not feel bloated at all feel good actually. Before starting this i used to have terrible wind, which i thought was due to the metformin since changing to lchf no wind at all, no stomach gurgling and no stomach pains must have been the carbs. I must admit by the time i go to bed i have no energy left but i guess that will sort itself out. Learning to have different things for breakfast is fun. Had sliced tomato, sliced ham and 2 babybel with mayo, salt and pepper was different but very nice and very filling. Enjoying this so far and certainly haven't felt deprived or missed the bread.
 
Eat fat / oil for energy, drink more water and more salt for 2 weeks
You have to get fat In your diet, knobs of butter on your veg , table spoon of olive oil over salad
Google fat bombs

Get rid of grain oils and trans fats, no marge for example

I have made the oopsie bread I saw on here and they are really good to use as a sandwich. I want to buy a julienne peeler so I can do courgette spaghetti. Anyone can recommend one? Cheera

just made the cake again but changed the cocoa for ground almonds and the water for orange juice. Made some icing too with the left over orange it was really nice try another flavour tomorrow.

Well done Caroline, you are making it fun as well as tasty.

My son is the choc cake chef, I make patty cakes in our electric pie-maker. My wife said she will buy an orange today so someone will make your Orange Delight.

I sort of make half patty cake half pie in the pie maker. I put in some cake mix batter add some filling then more batter. With 3 of us eating the cakes we go through about 6 patty cakes per day and one chocolate cake per day or every second day, What we don't eat we freeze and eat the next day.

I experimented to get the cake mix so it can probably be improved. Nut flours do not have glue -ten so they use a lot of egg, I did not want too many eggs so I used 1 tsp gelatine and 3 tble spoons olive oil and only 1 egg. To help the glue-ten deficiency I used some SR flour but not enough to send me high.

The fillings can be anything the first was sweetened microwaved apple, then we bought frozen mixed berries, then we found some glace cherries hiding in the fridge and some cooking chocolate buttons. So I put 1 1/2 cherries and one chocolate button in each patty cake for the non diabetics but they do not raise my BS if I only have one at a time. I ran out of filling so I just used jam for the last two and someone ate them.

The frozen mixed berries have other uses. I made some jam because I had gelatine and sweetener and the frozen berries.
The jam mixed with Worcestershire sauce makes a sort delish chutney much better than it sounds.

One thing leads to another.

My replacement for whole meal flour is
1/2 cup of each wheat flour, coconut flour, almond meal/flour
1 cup desiccated coconut
1/2 cup crushed peanuts
Vanilla essence
Baking soda
The above should end up about 16% of the dry mix as SR flour and I also use it for flat bread with grated cheese and herbs instead of egg, oil or gelatine.
You can leave out the SR flour if you like but I get away with the small amount in a cup cake.
 
well having my grandchildren round ive had a little relapse nothing major, no pasta potatoes or rice etc just the odd bit of cake or a sweet or two. they have gone now so back to making my own cakes and no sweeties. i still feel good though.
