Left over Xmas turkey. What to do with it?

I'm not overly keen on turkey but we have a fair bit left over. Apart from salads, what else could I use it for? I have the carcass in the slow cooker overnight to make soup with.
 
Curry or stir fry or bubble and squeak. We have left over lamb but there's not much of it left for the bubble and squeak for boxing day lunch but I do so love it. Hope you had a grand day!
 
we tend to look at things like shepherds pie as being lamb or spaghetti Bolognese being beef etc and something needing raw meat and some things cold but with a little imagination cold turkey with suitable gravy and veg can be used as a substitute in most recipes or other cold meats can be used just pay attention to moisture content and cut up the turkey into small chunks
 
I discovered a long time ago that re-roasted left over Christmas turkey is a good meal for diabetics if it dry and not burnt.

After 2 hours of consumption my blood sugar remains stable or slightly lower. I am now a turkey carcass hoarder at my family Christmas.
 
Today I made amazing turkey soup -I say amazing cos even I liked it - and I'm not a big fan of turkey.

I simmered the carcass (it was small enough as it was a small turkey crown) - overnight in the slow cooker.

This morning stripped the meat off it - it fell off as it was so moist and tender. I strained the stock thru a sieve to make the base of the soup.
I sweated some chopped onion in pan with a little sunflower oil and chopped in a small carrot, some yellow pepper, some butter nut squash, about 3 inches of celery, and added the stock. I also added some chives. Once the veg was tender I blitzed the lot with a hand blender until smooth. Then I added some single cream a tablespoonful at a time, tasting along the way. I ended up using 2 spoonfuls cream. I then added a very careful small sprinkle of cayenne pepper to give it some bite. Once happy with the taste I threw in all the turkey from the carcass to warm up. I still have enough left over for tomorrow (or to freeze).

As for the cold meat sitting in the fridge, it's probably gonna be another plate of that with cheeses, and other cold bits later today for tea.

I was about to ask something similar!

I can't recall ever having any left overs worth saving.

There is rarely much left over in this family after Christmas dinner, butties for supper and Boxing Day legs with anything at all from salad to chips. I count myself out of all that as I dislike turkey and never partake.

I think I saw one on www.dietdoctor.com but kiev butter is just butter and garlic cloves blended with marg if you want it loose but unsalted or salted butter to make a thick garlic butter piped in compressed chicken or turkey balls, breasts or any shape or size you like. Breadcumbed with protein bread is optional. I saw almonds crushed to give breadcumb effect too for low carbers. Egged first before covering in breadcrumbs/almond or hazelnut crumbs.

Last week I melted butter , garlic, sage and oregano on my turkey chunks and heated. Added some green onion and a rich of broth. Very warming. I keep things very simple now lol. Obviously

No, dog tastes like dog. I ate some mysterious spicy meat dish in Singapore in 1975, and asked what it was and the stall holder said "WOOF". It was ok as well.

Back to the topic, turkey rissoles are easy to make.
 
If I ate my dog today he would definitely taste like turkey!
I wanted to have rib of beef instead of turkey for xmas but I was overruled. You never see advice wanted for what to do with leftover rib of beef!
