I've been poor - I mean really poor - so I hate to waste food. I'm also a really lazy cook who can't be bovvered to fiddle about with complex recipes. I thought some of you might like to hear about today's brunch, which was mostly about leftovers.

Stir-fry! Cauliflower, sprouts, mushrooms, lardons, half a pepper (more would be fine but that's what there was) kale, bean sprouts, slice of lemon thinly chopped, small piece of bacon finely cut, butter, olive oil, cider vinegar. Took minutes, cost pennies.

I too hate throwing food out, we have Friday Fridge dinner or Fridge soup. Too much food is thrown out because it’s past sell by but perfectly fine, the only thing I’m careful with is chicken and fish - everything else if it looks and smells ok then it’s probably ok. Never had sell by when we were kids.

We didn’t have a lot when we were young kids but we never noticed, we never went hungry. My 2 favourite comfort foods (no way I could have them now though) from childhood that make me nostalgic are - whole boiled onions with butter and white bread and butter to dip in the “juice” and jacket potatoes with nothing but butter.

We had them rarely so we always thought of them as a treat. Now I realise why we only had them occasionally was because it was food we had when there was no money for food (end of the week) a bag of onions or a bag of tatties was cheap

I've heard of lardons but what are they ?
 
I just want to write ditto under all the previous posts (except for the whole boiled onions, that's a new one on me)
On Fridays we used to all have big takeouts. Now they all have takeout and I picnic on leftovers in the fridge. Maybe in a omelette or stir fry or maybe just refried with a big dod of mayonnaise. If you figure at £20 a takeout I've thoroughly enjoyed my food while saving hundreds of pounds and more than justifying test strips and chia seeds.

Or add a couple of eggs towards the end of stir frying and call it American hash.
Add soy sauce call it Asian hash
Add curry spices call it Indian hash
Different everytime but always tasty
 
No-one has mentioned soup.....
All my left overs end up as soup and will often do me a couple more meals too.
I loathe cooking but even i can shove left over veg and salad in a pan add some water and blitz.

I agree - I have in the past made the odd reference to "lumpy soup" which is my usual lunch. Another quick, easy, thrifty and tasty way of using up odd fridge bits.

Lardons I get in Aldi or Lidl. Personally I prefer unsmoked, but some of you might prefer smoked. They are a pretty good addition to many dishes, and you only need a few at a time.

I love the idea of this but at three months in I am still paranoid about getting an accurate carb count and think I would get confused with all the bits and pieces.
I do use up leftovers but its mostly meat and easy to count

Good point but trial and error is all part of lifes rich tapestry and to be fare i use insulin food and exercise to keep a good control.
