Lemon chicken, if you can't use it all, juice the lemons and zest them an freeze the juice in ice cubes for a later date, make A lemon butter, lemon juice and zest soften butter and mix together, make it into a roll with grease proof paper and pop in the freezer, a nice quick slice of it onto steaks, chicken or fish. Blitz one whole lemon and the juice from a couple of squeezed lemons in a blender.
Add water (i like sparkling water) til the lemon concentration tastes right.
Sweeten to taste (i use xylitol or erythritol but you can use whatever you like, including crushed sweetener tabs).
Chill.
