I've just been swanning around internet and other resources and found that liver and bacon, and probably eggs too would make a good low carb breakfast or other meal. Much of course depends on if you like the taste of liver. Years ago we used to eat it fairly often as it was a cheap source of meat. These days it's a bit harder to find unless you've got a 'proper butcher' near you as it's fallen out of favour in the supermarkets.
From the data on Liver & Bacon on CoFiD :
Carbs - Trace
Fat - 14.7
Cholesterol - 332.8 !! (wonder if this is an error)
Protein - 28.9
Sugar - 0
Kcal - 247
Sat Fat - 0
Anyway you could add eggs and or mushrooms and any green veg and have a really tasty meal with next to zero carbs.
Edit : I forgot to add that the glycaemic load of liver is very low. Can't find it for liver and bacon, but for liver and onions it's a GL of 4 which is almost as low as it gets so should only have a very slow impact on BG.
